Science Cafe: The microbiology of cheese

At the Aug. 9 Omaha Science Cafe, University of Nebraska-Lincoln's Robert Hutkins, Ph.D., will talk about the principles of cheese-making and how scientists seek to understand and improve the flavor, quality and safety of cheese.

He also will bring samples of his favorite cheeses to examine and taste.

When: August 9, 7 p.m.

Where: Slowdown, 729 N. 14th St., Omaha, NE

Who: Dr. Hutkins is Khem Shahani Professor of Food Microbiology at           the University of Nebraska-Lincoln. His research is focused on               how diet affects bacteria that live in the intestinal tract.

What: Science Cafe is a free educational event sponsored by UNMC           and other groups to increase science literacy among young                   adults. Free pizza, provided by the Nebraska Coalition for                       Lifesaving Cures, will be available for the first 50 attendees.

Though Federal, State, and local governments are primarily responsible for setting food safety standards, many other organizations share a stake in carrying out enforcement of the standards. The Conference for Food Protection brings together representatives from the food industry, government, academia, and consumer organizations to identify and address emerging problems of food safety and to formulate recommendations. The Conference seekOrlando, FLs to balance the interests of regulatory and industry people while providing an open forum for the consideration of ideas from any source. The Conference meets at least biennially to provide this forum. Though the Conference has no formal regulatory authority, it is a powerful organization that profoundly influences model laws and regulations among all government agencies and minimizes disparate interpretations and implementation.

Workshop: Managing Molds and Mycotoxins in Stored Grains

This workshop will address the concerns of molds and mycotoxins in stored grains. It will provide a basic understanding of the molds and mycotoxins that occur in cereal grains and practical methods for detection and semi-quantitation of mycotoxins. Proper storage and handling practices to prevent mold growth and mycotoxin production, along with the current condition of stored grains in Nebraska and other states, resulting from a wet harvest season, will be discussed. The potential threat of human and animal diseases associated with moldy grain and handling of moldy grain will also be covered.
